After the birthday celebrations on the week end, we were left with quite a bit of barbecued beef and chicken. The chicken is always easy to use up. Think chicken salad, wrap and the good old sandwich for lunches. But how to use up barbecue beef?
The beef was really tender and had been marinated so had a lovely flavour already. Seeing as we’ve been having really hot nights a cold dinner sounded perfect.

My take on a Thai beef salad. I added some noodles to make it go a little further. We have big eaters in this family!
